The young couple began the laborious task of digging up the young vines at the nursery site, transporting them to the Dundee property and replanting them there. On the new property, a pair of red-tailed hawks were nesting in a Douglas-fir, raising a new brood. Watching the birds provided distraction from the tedious work; it also inspired the name of the winery.
